Eggs Make the Meal


Over the years, I’ve had my share of breakfast dishes served during various gatherings, brunch and potlucks. Many of these breakfast dishes used a base of day-old pieces of bread that were soaked in eggs and milk overnight. Breakfast dishes using about half a dozen eggs are quite versatile, and they weren’t meant just for breakfast. When being served these versatile dishes, I remember eating them lunch or brunch. When I worked the swing shift, these dishes were also served as part of the menu.

Once I retired, I found the perfect breakfast dish that was so easy to make. My husband came home from work one day and was raving about a dish that was made by his boss for a holiday potluck. It was so popular with the crew that the boss made copies of the recipe and distributed it to his employees.

The Serbian Breakfast Dish is perfect for some lazy Saturday or Sunday morning when things around the house are slowing down, and you don’t want to put a lot of effort into a meal. The dish is easy to prepare, and can travel well to your next potluck. Don't rule this recipe out as a dish to serve during the busy work week.

Serbian Breakfast Dish

Ingredients:

6 eggs, lightly beaten

1 cup flour

1 tsp. baking powder

1 cup milk

1 stick butter, melted

1 pt., small curd cottage cheese

2 cups shredded cheese (your choice)

Salsa (optional)

Directions:

1) Mix all ingredients together (except salsa) in a large bowl.

2) Place mixture in a 9”x13” pan.

3) Bake at 350 degrees for 40 minutes.

4) Serve immediately or cool and cut into squares.

5) Top with salsa if desired.

Serbian Breakfast Dish Variations

Shown: add one can black olives (chopped into rings) and 2 cups sliced mushrooms to mixture.

Crumbled bacon and sausage may also be added to the mixture.

Well you got me here, never heard of this b-fast dish. It looks great and easy to execute. The cottage cheese is a definite twist for sure. I think egg dishes are superb for any time of the day and as you wrote perfect for a potluck dish.

Hi, jenubouka. A few summers ago, I was at this community garage sale and found a series of cookbooks. I could not resist. Someone (someone's grandma?) had taken index cards and written or typed all these recipes. I could not believe my good fortune. She had neatly added newspaper recipes by cutting them out very carefully. So, I try to add to the books. I cannot believe someone would toss someone's collection of recipes, but I scored. This casserole is way too easy, and it is now part of "The Collection." I put the leftovers and two flour tortillas in hubby's lunch this morning.

I thought I had grandma's recipe book. Which I find sad that someone would toss it or give it away. A lot can be said for a person's recipes, and I didn't have grandparents to play with. I have to settle for recipes.

Hi, alocsin. I found a lot of recipes for Serbian breakfast dishes on the Internet, but this is the name of the egg recipe from my husband's boss. He wasn't Serbian, but the name for the recipe stuck.
